HAPPY NEW YEAR

On the morning of my 28th birthday & the last day of 2011,  I have so much to reflect on!?!

What a magical, beautiful, crazy, exciting year 2011 was! It was a year filled with so much love, laughter, tears, smiles, ups & downs (mostly ups), what a year. 2011 was the most life changing year I've ever had...it's purpose was to prepare me for the most amazing days ahead & I am so thankful for that. 9 months of the year was spent growing a tiny person, the most precious gift I have ever received. During that 9 months I learned SO MUCH about life & love. 2011 was the year I discovered the most magical kind of love I've ever experienced. It was most definitely a year of transition & reinvention.
As I look back on the last 365 days I realize that the most amazing of those days are nothing compared to what's to come...I've never been more ready for anything in my life.  I am so excited for 2012.

TEETHING

After weeks of outfit changes related to drool, watching her rub her tongue on her gums & now gnawing at her fingers, I think it is safe to say Addison is teething. At first I figured there was no way since she is only 3 months (average age is 6 months) but I am pretty confident that she is. Thankfully she is being a trooper! Over the last few days I can tell she is a little more uncomfortable which isn't surprising because her poor little gums are swollen. I've been slathering them with baby orajel & holding teething rings in her mouth for her (she doesn't like to hold them when they are cold, lol).  Thank goodness for Sophie, her teething giraffe too!  I hope a tooth makes an appearance soon & this isn't a long drawn out process for her.
Ha Ha Ha...I like how she had both fingers & Sophie in her mouth @ the same time.

I managed to get 1 picture of her without her fingers in her mouth but she was captivated by the TV & has her mouth open, lol.

DELISH IS AN UNDERSTATEMENT

Dinner was AHHHH-MAZING tonight! If you like spinach, chicken & Mediterranean flavors then you HAVE to try this.  It's a healthy, protein packed twist on the Greek Spanakopita.

CHICKEN SPANIKOPITA MEATBALLS

What you Need:
16 oz ground chicken (I like Perdue Fit & Easy)
1 small yellow onion
5 cloves of garlic divided (3 for onion saute & 2 for sauce)
2 tablespoons fresh oregano
7 cups fresh baby spinach
3/4 cup Fat Free Feta Cheese
1 tablespoon McCormick Montreal Chicken seasoning
1 1/2 cups Fat Free Plain Greek Yogurt
1/2 cucumber
1/2 lemon, juiced
1 1/2 teaspoons Coriander
1 1/2 teaspoons Cumin
3 tablespoons fresh Dill
Sea Salt


First preheat oven to 400 degrees.

Next finely chop onion, 3 cloves of garlic & fresh oregano.  Saute in pan sprayed with olive oil cooking spray over medium-high heat.
 Once onions are golden brown add to medium bowl & set aside.

 Once again spray the saute pan with olive oil spray & add 7 cups of baby spinach. Cook until wilted. Drain excess moisture from spinach & finely chop.

In the bowl with onion/garlic mixture, add 16 oz ground chicken, 3/4 cup fat free feta cheese,  1 tablespoon of McCormick Montreal Chicken seasoning & wilted spinach & mix together.
Form into 18-20 round balls & place on baking sheet.  Spray meatballs with olive oil spray & bake for 15-20 minutes.

While your meatballs are baking, finely chop 3 tablespoons fresh Dill & add to food processor along with 1 1/2 cups plain Fat Free Greek yogurt, juice of 1/2 of lemon, 1/2 cucumber peeled/seeded, 1 1/2 teaspoons of coriander & 1 1/2 teaspoons of cumin & pulse until creamy.
Pour Tzatziki sauce into serving bowl & top with paprika.
Pair the sauce together with the meatballs...DELISH IS AN UNDERSTATEMENT!  You can slice the meatballs thin, line 1/2 a whole wheat pita with the tzatziki sauce, cook up whole grain cous cous & serve over that. Or do what I did & eat them by themselves. SOOOOO GOOD!

You can definitely alter the recipe (i.e. extra virgin olive oil instead of spray, frozen spinach instead of fresh, dried spices instead of fresh.) I prefer fresh ingredients because it adds so much more flavor & use olive oil spray instead of extra virgin olive oil because it cuts the calories/fat significantly & doesn't alter the taste. I adapted the recipe from Rachel Ray.


So glad that I made 21 of these little guys & there are plenty in the fridge for lunch this week. YUMMO! Each meatball (made exactly the way I made them) is approx 26 Cal, 0.2 g Fat, 2 Carb,
6 g Protein.  The entire bowl of the tzatziki sauce is 210 Cal, 0 fat, 34.5 g Protein.

A typical serving of ground chicken is 4 ounces so you should get AT LEAST 4 servings from the meatballs & don't need more than 2 TBS of the sauce per serving.  Very low Cal, low Carb, High Protein meal.

AFTER CHRISTMAS SALES

Decided to venture out the mall today & was pleasantly surprised by NO crowds & GREAT deals! I think the cool, rainy, dreary weather kept people away.  I managed to scoop up some pretty great deals.

77 Kids is by far one of my FAVORITE store to shop at for Addison. There clothes are adorable, way affordable, super trendy & they ALWAYS have great sales.  Today was no exception.  Virtually everything in the store is marked down & right now everything is an additional 30% off.  I was lucky & had a $10.00 reward card & a 20% off total purchase coupon.  I was able to find a few things for Addison next year.
All this for under $40.00.  The jacket alone full price was $69.50


Restoration Hardware is also having an INCREDIBLE sale.  They are having their annual winter clearance event as it is but the store at Crabtree is closing & EVERYTHING in the store is at least 50% off. I have been stalking a giant letter T for months but couldn't bring myself to pay $70 for it. 
Stalk no more :)  I was more than happy to purchase it 50% off. It's going to be perfect hanging in the midst of some pictures we are hanging in a gallery fashion on our living room wall. 

GAP is also having a BLOWOUT sale.  All marked down merchandise is an additional 40% off.  I picked up a cableknit vest I've had my eye on for $12.00 that was originally $54.00 & some red skinny jeans dirt cheap. 

I am not much of an American Eagle shopper but I had a $10.00 reward & got a super cute short sleeved waist length lacy top for next to nothing. 

Belk is having a HUGE sale! Some French Connection, Theory, Joes Jeans & lots of other designer stuff is marked 75% off.   

Francessca's has some goodies marked 75% off too.  

Today was definitely a succesful shopping day.  I actually bought some things for myself instead of just Addison & the house which made the deals even sweeter :)

3 CHRISTMASES

We had a VERY blessed, family filled holiday weekend celebrating 3 Christmases. 

We kicked it off Friday night celebrating at Philip's mom's house with his family.  It was the first time since Addison was born that everybody was able to get together.  Addison met her cousin Holden for the first time & was beyond spoiled by her Aunts/Uncle & Grandma.

Saturday my family come to our house. We had a fantastic dinner, exchanged presents & spent the evening laughing/playing games.

Philip, Addison, Hampton & I celebrated Addison's first Christmas together as a family on Christmas Morning. We went to a Christmas Service at church & relaxed in the afternoon. We turned the fireplace on (simply for effect, lol.  It was like 60 degrees outside) got back into our jammies & lounged around the house until I had to head into work. I worked 7pm-3am. 
She was so much fun to watch because she was so intrigued by everything
We had a WONDERFUL first Christmas with Addison. She is by far the BEST GIFT EVER!

A lot of people ask me where I get Addison's headbands from.  Anyone that knows me knows I am OBSESSED with ETSY & that is where I get a lot of them. I also make them myself.

POTTERY BARN'S EXCELLENT CUSTOMER SERVICE

We are STILL waiting for our ottoman from Pottery Barn.  As of this afternoon we FINALLY have some answers with a solution.  Apparently the factory ran out of the fabric our couch slip covers are made out of & what our ottoman slip cover is supposed to be made of.  They aren't sure when or if they will even get the same fabric in which means our ottoman is on back order indefinitely.  Thankfully Pottery Barn has been more than helpful & they are upgrading our slip cover for our ottoman to the highest grade fabric in the same color we ordered & they are also sending us brand new slip covers for the couch & chair in that upgraded fabric.  They even gave us the option to switch colors all together.  Way to go Pottery Barn & your excellent customer service!  We still have to wait for our ottoman because they make them to order but we have already waited this long so what's another couple of weeks.

RE-PURPOSING CLOTHES

This girl has more clothes than I know what to do with. People constantly ask me if she ever wears the same thing more than once. She definitely does but I buy mostly separates for her (just like I do myself) so I can change things up.  She might not have worn the same "outfit" more than 1 time but definitely the articles of clothing, especially because I re-purpose so many of her things. Today she is wearing a newborn onesie that still fits that came in a set with leggings & jacket that no longer fit.  Her "sweater vest" is actually a newborn dress that she only wore 2 times & her jeggings came with a set my mum bought her.  Her knit items like hat & shoes can be stretched so she will get lots of use out of them as well.  The same goes with headbands.  She has a few printed onesies that I completely adore but got stained by either my carelessness or accidents that I have cut around the stains & turned them into rosettes for headbands/clips.  There is really a lot you can do to make clothes last.
It helps that Addison is really petite. Pictures of her are quite deceiving. While she has chubby little cheeks there is nothing chubby about the rest of her body.  Score for us & her clothes because they are lasting so much longer!
Clothes can even be used as tissues, something to suck on, a place to hide...lol.  She was kinda over me taking her picture.

So to answer the question, "does she ever wear the same thing more than once", the answer is Yes.

1ST BAKING EXPERIENCE

 
We've been barreling through this week full steam ahead...I can't believe it's already Friday!?!  I love the holidays but sometimes they feel like a blur because we are so BUSY during this season!  We have a dinner party Saturday so I spent the day running from grocery store to grocery store to gather what I needed & baked my day away with Addison strapped in her baby Bjorn.  It was AWESOME!  A Very She & Him Christmas blasted in the background, flour was all over the counters, dirty dishes stacked up & the fruit of my labor smelled like pure delight.  I have always dreamed of baking holiday goodies with a daughter someday & this Christmas I was able to do so...amazing feeling.  I can't wait until next year when Addison is actually aware of what is going on & the splatter from the mixing bowl is her doing, not mine. 

Although she had no clue we were baking she was undoubtedly intrigued by the sound of the mixer & kept trying to grab it & the bowl.  This was her first baking experience. I love the holiday!

HAPPY BIRTHDAY HAMPTON

Happy 1st Birthday to my BIG SLOBBERY baby...my precious Hampton! 
It's hard to believe this big guy is already 1.  It's been a fun & challenging year, especially the last several months but I wouldn't trade it for anything...I can't imagine my life without him. 
You know you love your dog when you bake them a birthday cake (which smelled delicious by the way) strap on a silly birthday hat & let him sit at the kitchen table.   
 Please excuse Philip & my appearance.  I had just come in from a run & Philip was headed to work out.  At least Hamp & Addison look cute :)  Hampton definitely enjoyed the cake & his new rope toy. Happy Birthday little buddy!

THIN MINT TRUFFLE {SWOON}

This past weekend was the kickoff for this years long list of holiday parties.  For the party we attended Sunday we were responsible for bringing a side dish & dessert.  Hmmmmm, what to bring? While I LOVE to bake & cook (and personally think I am pretty good at it), my pumpkin protein bars & baked chicken with sweet potatoes don't generally appeal to the masses, lol...at least during the holidays.  So I did what seems to my norm these days & perused Pinterest.  Of course it came through...enter

I made a few adjustments only because I waited until the last minute to make them & my local grocery store was out of a few things.  I used vanilla almond bark & dyed it with green food coloring because I couldn't find the mint morsels & used white chocolate to drizzle on top.  All & all I was pretty pleased with the way they looked & everybody that ate them said they were great. I think I'll be making these again.  In fact, it inspired me to make a few other types of truffles for this weekends party Philip & I are hosting. Thanks once again Pinterest.

Jolly Ole Saint Nick

We attempted to take Addison to see Santa Claus Saturday but after waiting in line for 20 minutes we were told that we were "waiting to put our name on the waiting list." There was a 4 hour wait...needless to say Addison & Jolly Ole Saint Nick didn't meet that day.  We took a chance this morning when the mall first opened & luckily after a short wait, they met.
 Addison was more interested in the bells the photographer was shaking & searching for the sound of her Sophie Giraffe. Thankfully there were no tears & she sat on Santa's lap like a big girl.

ROLLING OVER

I have an extremely confusing, STRONG WILLED child, lol.  A week ago I posted how much she hated tummy time & now I can't seem to get her OFF HER TUMMY.  She has been rolling over from stomach to back for probably about a month now & back to front since Saturday.  Now that she has mastered back to stomach I CAN'T KEEP HER OFF HER TUMMY!!! Exciting right?!  Very, except that she is doing it during sleep which completely freaks me out. For the most part she stays on her back during at night but every single nap this is how I keeping finding her....


I put her back on her back, she gives me that gummy grin...I walk out & peak at the monitor & bam, she is on her stomach again.  I go back in, flip her back to her back & she rolls back onto her stomach.   I gave up this morning & let her sleep on her stomach but I am not sure if that is even ok or not.  I know at this point the risk of SIDS is dramatically reduced & my generation slept on our stomachs but being an educated person, knowing why the American Academy of Pediatrics recommends back sleeping & being an ER nurse...I just don't feel comfortable with it.  Maybe I am the one who is confusing, lol.  Last week I was worried she didn't spend enough time on her tummy & now that I can't get her off of it, I am freaking out, lol.

WIDE EYED WONDERMENT

As an adult it's easy to lose track of how amazing this world is. Addison is reminding me of that. I love how she stares in bewilderment & curiosity...everything is new & good. I love how she gazes in wide eyed wonderment as she feels new fabrics & hears new sounds. She is so trusting & relaxed.  I love catching her in a moment of discovery.
